Roots started as a bakery in Western New York and Kate specialized primarily in baked goods, but seeing the lack of food options in her area, and the lack of healthy food at the events she attended with Mothboys, her goal to expand her culinary prowess to include real food came to fruition when she found the School Bus food truck last year.
